Homemade Curried Broccoli

One of the best ways to serve up some healthy green broccoli! Curried in cheddar cheese and corn flakes this simple recipe makes eating vegetables delicious!

Homemade Curried Broccoli

INGREDIENTS                                                         

  • 2 (10 oz) pkg frozen broccoli (Or 1 large bunch fresh)
  • 1 cup corn bread crumbs (Or corn flakes crushed)
  • 1 can cream of mushroom soup
  • 1/3 cup mayonnaise
  • 1 tsp curry powder
  • 1/4 cup sour cream
  • 1 tbsp lemon juice
  • 1/2 cup grated cheddar cheese

INSTRUCTIONS

  1. If using fresh broccoli, chop it into bite-size pieces, place in 1qt bowl and add 1/4 cup water, cover. Microwave on high, 7 to 10 mins. Drain.
  2. Place crumbs on bottom of 2qt casserole dish. Mix curry powder, soup, mayonnaise, lemon juice, and sour cream. Stir into drained broccoli. Place over crumbs. Top with cheddar cheese.
  3. Microwave on medium 10 to 12 mins.
