Homemade Curried Broccoli

INGREDIENTS
- 2 (10 oz) pkg frozen broccoli (Or 1 large bunch fresh)
- 1 cup corn bread crumbs (Or corn flakes crushed)
- 1 can cream of mushroom soup
- 1/3 cup mayonnaise
- 1 tsp curry powder
- 1/4 cup sour cream
- 1 tbsp lemon juice
- 1/2 cup grated cheddar cheese
INSTRUCTIONS
- If using fresh broccoli, chop it into bite-size pieces, place in 1qt bowl and add 1/4 cup water, cover. Microwave on high, 7 to 10 mins. Drain.
- Place crumbs on bottom of 2qt casserole dish. Mix curry powder, soup, mayonnaise, lemon juice, and sour cream. Stir into drained broccoli. Place over crumbs. Top with cheddar cheese.
- Microwave on medium 10 to 12 mins.
