This sweet fruit salad is filled with mandarin oranges, pineapples, bananas, and orange tapioca pudding mix. Sweet and cold this is a huge hit with the whole family!
Orange Tapioca Fruit Salad

INGREDIENTS
- 1 (13 oz) can pineapple tidbits
- 2 (11 oz) cans mandarin oranges
- 1 (3 oz) pkg vanilla tapioca pudding mix
- 1 (3 oz) pkg orange tapioca pudding mix
- 1/4 tsp orange flavoring
- 1 (3 oz) pkg peach gelatin
- 1 cup boiling water
- 4 bananas
INSTRUCTIONS
- Drain the juice from the pineapple and oranges and add enough water to make 3 cups of liquid. Mix the 2 boxes of pudding mix with the 3 cups of liquid and orange flavoring in a heavy saucepan. Cook until the tapioca is thick and clear, stirring constantly. Set aside to cool.
- Dissolve the gelatin in the boiling water and let cool until syrupy. When both mixtures are cool, mix together and the pineapple and oranges. Fold in the 4 bananas which have been cut in half lengthwise and sliced.
- Chill for at least 1 hr.
