Orange Tapioca Fruit Salad

This sweet fruit salad is filled with mandarin oranges, pineapples, bananas, and orange tapioca pudding mix. Sweet and cold this is a huge hit with the whole family!

INGREDIENTS

  • 1 (13 oz) can pineapple tidbits
  • 2 (11 oz) cans mandarin oranges
  • 1 (3 oz) pkg vanilla tapioca pudding mix
  • 1 (3 oz) pkg orange tapioca pudding mix
  • 1/4 tsp orange flavoring
  • 1 (3 oz) pkg peach gelatin
  • 1 cup boiling water
  • 4 bananas

INSTRUCTIONS

  1. Drain the juice from the pineapple and oranges and add enough water to make 3 cups of liquid. Mix the 2 boxes of pudding mix with the 3 cups of liquid and orange flavoring in a heavy saucepan. Cook until the tapioca is thick and clear, stirring constantly. Set aside to cool.
  2. Dissolve the gelatin in the boiling water and let cool until syrupy. When both mixtures are cool, mix together and the pineapple and oranges. Fold in the 4 bananas which have been cut in half lengthwise and sliced.
  3. Chill for at least 1 hr.
