Homemade Oatmeal Butterscotch Cookies

This is a Fry Fam favorite! These chewy oatmeal cookies are the perfect treat for any occasion! They pair perfectly with a cup of fresh coffee or as a delicious treat with some mid-afternoon tea. This recipe is something you will make time and time again.

Homemade Oatmeal butterscotch Cookies

INGREDIENTS

  • 1 1/4 cup all purpose flour
  • 1 tsp baking soda
  • 1 cup butter, softened
  • 1/4 cup sugar (optional)
  • 3/4 cup firmly packed light brown sugar
  • 1 pkg instant butterscotch pudding
  • 2 eggs
  • 3 1/2 cups rolled oats
  • 3/4 cup butterscotch chips

INSTRUCTIONS

  1. Mix flour with baking soda. Combine butter, brown sugar, sugar (optional), and pudding mix in large bowl; beat until smooth and creamy. Beat in eggs.
  2. Gradually add flour to the mixture; then stir in oats and butterscotch chips. (Batter will be stiff)
  3. Refrigerate for 30 mins to harden. Drop batter by rounded (tsp or tbsp depending on desired size) onto ungreased baking sheets. Bake at 375 for 8 mins. ENJOY!

  • Make sure to let the cookies cool before scooping off pan or they will tend to fall apart easily.
  • Can be frozen and taste just as good cold or warm, it is your choice!
