Homemade Oatmeal butterscotch Cookies

INGREDIENTS
- 1 1/4 cup all purpose flour
- 1 tsp baking soda
- 1 cup butter, softened
- 1/4 cup sugar (optional)
- 3/4 cup firmly packed light brown sugar
- 1 pkg instant butterscotch pudding
- 2 eggs
- 3 1/2 cups rolled oats
- 3/4 cup butterscotch chips
INSTRUCTIONS
- Mix flour with baking soda. Combine butter, brown sugar, sugar (optional), and pudding mix in large bowl; beat until smooth and creamy. Beat in eggs.
- Gradually add flour to the mixture; then stir in oats and butterscotch chips. (Batter will be stiff)
- Refrigerate for 30 mins to harden. Drop batter by rounded (tsp or tbsp depending on desired size) onto ungreased baking sheets. Bake at 375 for 8 mins. ENJOY!
