This meatloaf is one of my favorites. A perfect mix of cheeses, meat, and spices this meatloaf is hearty protein packed meal that will delight the taste buds.

INGREDIENTS
- 1/2 cup bread crumbs
- 1 1/2 lb ground beef
- 1 (6 oz) can tomato paste
- 2 eggs
- 1/2 cup finely chopped onions
- 1/4 cup green pepper
- Salt & Pepper to taste
- 1/2 cup cracker crumbs
- 1 (12 oz) carton cottage cheese
- 1 (3 oz) can chopped mushrooms
- 1/2 tsp oregano
- Mozzarella cheese
INSTRUCTIONS
- Combine bread crumbs, ground beef, tomato paste, eggs, onions, and pepper. Place 1/2 of the mixture in bottom of 8x8x2″ pan. Top with slices of mozzarella cheese.
- Combine cracker crumbs, cottage cheese, mushrooms, and oregano. Spread over top of mozzarella slices. Top with more mozzarella slices and remaining hamburger mixture.
- Bake at 350 for 1 hr. Let stand 10 mins to cool before serving.
