Homemade Italian Meatloaf

This meatloaf is one of my favorites. A perfect mix of cheeses, meat, and spices this meatloaf is hearty protein packed meal that will delight the taste buds.

INGREDIENTS

  • 1/2 cup bread crumbs
  • 1 1/2 lb ground beef
  • 1 (6 oz) can tomato paste
  • 2 eggs
  • 1/2 cup finely chopped onions
  • 1/4 cup green pepper
  • Salt & Pepper to taste
  • 1/2 cup cracker crumbs
  • 1 (12 oz) carton cottage cheese
  • 1 (3 oz) can chopped mushrooms
  • 1/2 tsp oregano
  • Mozzarella cheese

INSTRUCTIONS

  1. Combine bread crumbs, ground beef, tomato paste, eggs, onions, and pepper. Place 1/2 of the mixture in bottom of 8x8x2″ pan. Top with slices of mozzarella cheese.
  2. Combine cracker crumbs, cottage cheese, mushrooms, and oregano. Spread over top of mozzarella slices. Top with more mozzarella slices and remaining hamburger mixture.
  3. Bake at 350 for 1 hr. Let stand 10 mins to cool before serving.
