Homemade Carrot Cake Cookies

Always loved carrot cake, but didn’t want the work of making a whole cake? Well, now you can enjoy these cream cheese frosting stuffed carrot cake cookies that are everything you love about carrot cake. Soft and chewy and absolutely delicious!

Homemade Carrot Cake Cookies

INGREDIENTS

Cookies

  • 2 sticks unsalted butter
  • 1 cup brown sugar
  • 1 cup sugar
  • 1 tsp vanilla extract
  • 1/4 tsp salt
  • 2 eggs
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 2 cups all-purpose flour
  • 1 1/4 tsp cinnamon
  • 1 cup rolled oats
  • 1 1/2 cup grated carrots
  • 1 cup raisins
  • 3/4 cup chopped walnuts (optional)
  • 1 cup sweetened coconut, shredded (optional “I’m not a coconut fan”)

Cream Cheese Frosting

  • 1 cup cream cheese, softened
  • 1 stick unsalted butter, softened
  • 1 cup confection sugar, sifted
  • 1 tsp vanilla extract
  • 1/4 tsp salt
  • 1/4 tsp grated lemon zest

INSTRUCTIONS

Cookies

  1. In a bowl use a hand mixer to gently blend the butter, sugars, salt, and vanilla on low until light and fluffy (about 5 mins). Add eggs one at a time, scrape down bowl after beating each egg.
  2. Sift the flour, baking soda, baking powder, and cinnamon together into a large bowl. Add to the creamed mixture all at once and mix on low just until combined. Stir in oats, coconut (optional), carrots, raisins, and walnuts (optional) by hand. Refrigerate dough until firm (30-45 mins).
  3. While dough is firming preheat oven to 350 and line two baking sheets with parchment paper. Scoop dough in small balls onto the prepared baking sheets about 1 1/2 inches apart. Bake until golden brown (12-15 mins)

Cream Cheese Frosting

  • Using a hand mixer beat the cream cheese, butter, and confection sugar on medium until light and fluffy (6 mins). Add the vanilla, salt, and lemon zest and mix thoroughly.
  • Once cookies have cooled completely spread frosting on the bottom of one cookie and sandwich together with another. ENJOY!
