INGREDIENTS
- 2 cups all-purpose flour
- 1 tsp baking soda
- 1/2 tsp cinnamon
- 1/4 tsp salt
- 3/4 cup packed brown sugar
- 1/2 cup (1 stick) unsalted butter, softened
- 2 eggs
- 1/3 cup plain yogurt or sour cream (I use the plain yogurt)
- 2 cups mashed bananas (about 4 ripe bananas)
- 1 tsp vanilla extract
- 3/4 cup chopped pecans (optional)
INSTRUCTIONS
- Preheat oven to 350. Grease a 9×5 inch pan and set aside.
- Mix flour, baking soda, salt, and cinnamon. Use a handheld mixer to mix butter and brown sugar together. Beat on high until smooth (about 2 mins). Add eggs one at a time and beat well. Add in yogurt, mashed bananas, and vanilla extract and beat until well combined.
- At slow speed slowly beat in the dry ingredients and mix until all the flour is well combined. Fold in nuts (optional).
- Pour batter into baking pan and bake for 60-65 mins or until toothpick comes out clean.
