Homemade Banana Bread

Super moist with a hint of brown sugar and sweet banana, this warm banana bread will melt in your mouth and is the perfect treat to go with your morning coffee or as a delicious snack.

INGREDIENTS

  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp cinnamon
  • 1/4 tsp salt
  • 3/4 cup packed brown sugar
  • 1/2 cup (1 stick) unsalted butter, softened
  • 2 eggs
  • 1/3 cup plain yogurt or sour cream (I use the plain yogurt)
  • 2 cups mashed bananas (about 4 ripe bananas)
  • 1 tsp vanilla extract
  • 3/4 cup chopped pecans (optional)

INSTRUCTIONS

  1. Preheat oven to 350. Grease a 9×5 inch pan and set aside.
  2. Mix flour, baking soda, salt, and cinnamon. Use a handheld mixer to mix butter and brown sugar together. Beat on high until smooth (about 2 mins). Add eggs one at a time and beat well. Add in yogurt, mashed bananas, and vanilla extract and beat until well combined.
  3. At slow speed slowly beat in the dry ingredients and mix until all the flour is well combined. Fold in nuts (optional).
  4. Pour batter into baking pan and bake for 60-65 mins or until toothpick comes out clean.
