This delicious dairy-free Mac & Cheese is rich and creamy and also dairy-free! Served it at our last party and no one could tell it wasn’t real cheese!

INGREDIENTS

  • 1 pkg (8 oz) macaroni elbows
  • 1 1/2 tbsp olive oil
  • 1 onion, diced
  • 1 russet potato, peeled and grated
  • 3 cloves garlic, minced
  • 1/2 tsp onion powder
  • 1/2 tsp garlic powder
  • 1/2 tsp mustard powder
  • Salt to taste (I use about 3/4 tsp)
  • 2 shakes of red pepper flakes
  • 1 cup water
  • 1/4 cup yeast
  • 2 tsp apple cider vinegar

INSTRUCTIONS

  1. Cook macaroni according to package. Drain. Put Macaroni in large bowl.
  2. In large saucepan heat oil. Add onion and a little salt, stir often and cook 5 mins. Add in potato, garlic, garlic powder, onion powder, mustard powder, salt, and pepper flakes. Stir and simmer for 1-2mins. Continue simmering until potatoes are tender, stirring often.
  3. Put mixture in a blender and add in yeast and vinegar. Blend until completely smooth and add in water as necessary for consistency. Add salt or more vinegar to taste.
  4. Pour sauce over pasta and combine!
