INGREDIENTS
- 1 small onion, diced
- 1 (4oz) bag plain plantain chips, crushed
- 1 pound ground chicken
- 1/2 tsp sea salt
- 1 tbsp dried cilantro leaves
- 1/2 tsp garlic powder
- 1/2 tsp ginger powder
- 1/2 tsp ground black pepper
INSTRUCTIONS
- Preheat oven to 350. Line a rimmed baking sheet with parchment paper.
- In a bowl, combine the onion, crushed plantain chips, ground chicken, salt, and spices and mix until well combined. Shape the mixture into 2″ balls.
- Place the balls on the prepared baking sheet and bake for 20-25 mins. Halfway through baking time, turn the balls so that the other side gets evenly browned.
