INGREDIENTS
- 1 tbsp oil
- 1/2 onion, diced
- 2 1/2 lbs ground beef
- 2 tbsp salt
- 1 tsp pepper
- 2 tbsp keto taco mix
- 1 jalapeno, finely diced or minced
- 6 eggs, beaten
- 2 cups Mexican cheese, shredded
- 2 tbsp parsley
INSTRUCTIONS
- Heat oven to 350. Heat oil in a large skillet over medium heat and cook onion until slightly tender. Add in ground beef, salt, and pepper. Brown beef until no pink remains. Add in taco seasoning and jalapeno and simmer for 1-2 mins. Drain.
- In a large bowl beat eggs and add to meat. Spread meat onto bottom of 2qt baking dish. Top with cheese and bake for 25 mins.
- Sprinkle with parsley and top with sour cream (optional).
