Creamy Sweet Potato Soup

A simple yet delicious creamy and rich soup that is packed with the nutrients of sweet potatoes! This soup is an excellent source of magnesium and is perfect as a mid-day snack or paired with a homemade casserole.

Creamy Sweet Potato Soup

INGREDIENTS

  • 2 tbsp coconut oil
  • 1 medium onion, chopped
  • 2 garlic cloves minced
  • 1 celery stalk, chopped
  • 3 medium sweet potatoes (1 1/2 lb), peeled and cut into 1″ pieces
  • 3 cups organic chicken broth
  • 1/4 tsp ground cinnamon
  • 1/2 tsp sea salt
  • 3/4 cups unsweetened coconut milk
  • 1/4 tsp ground black pepper

INSTRUCTIONS

  1. Heat the oil in a dutch oven over medium heat. Add the onion, garlic, and celery; cook, stirring occasionally until tender, 7-8 mins.
  2. Increase the heat to medium-high, add the sweet potatoes, chicken broth, and cinnamon, bring to a boil. Immediately reduce heat to medium and simmer, uncovered, until the potatoes are tender, 18-20 mins. Remove from the heat and let cool for 15-20 mins.
  3. Transfer the soup to a blender in batches and puree. Return it to the dutch oven, stir in coconut milk, and cook over medium heat until warmed through, 4-5 mins. Remove from the heat and stir in the salt & pepper. ENJOY!
