Homemade Sausage and Egg Breakfast Casserole

INGREDIENTS
- 1 pkg (12 oz) breakfast sausage links
- 6 english muffins, cut into small cubes
- 1/4 cup butter, melted
- 1 cup shredded cheddar cheese
- 1 cup shredded mozzarella cheese
- 1/2 cup chopped onion
- 1/2 cup chopped red pepper
- 12 eggs
- 2 cups milk
- 1/2 tsp salt
- 1/2 tsp pepper
- 1/4 cup bacon bits (I fry up fresh bacon and crumble it up)
INSTRUCTIONS
- Cook sausage according to pkg directions. Cool and cut into 1/4’s. Place english muffin cubes into a greased 13×9 inch baking dish; drizzle with butter.
- Layer muffin cubes with sausage, cheese, onion, and red pepper.
- In a large bowl combine the eggs, milk, salt, and pepper. Pour over cheese. Sprinkle with bacon. Cover and refrigerate overnight.
- Remove from refrigerator at least 30 mins prior to baking. Uncover and bake at 350 for 45-50 mins or until knife comes out clean.
