Homemade Sausage and Egg Breakfast Casserole

The fry fam seems to make this breakfast casserole at least once a week. Packed with fluffy eggs, cheese, bacon, and sausage this delicious casserole is packed with protein is an instant hit!

Homemade Sausage and Egg Breakfast Casserole

INGREDIENTS

  • 1 pkg (12 oz) breakfast sausage links
  • 6 english muffins, cut into small cubes
  • 1/4 cup butter, melted
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup chopped onion
  • 1/2 cup chopped red pepper
  • 12 eggs
  • 2 cups milk
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1/4 cup bacon bits (I fry up fresh bacon and crumble it up)

INSTRUCTIONS

  1. Cook sausage according to pkg directions. Cool and cut into 1/4’s. Place english muffin cubes into a greased 13×9 inch baking dish; drizzle with butter.
  2. Layer muffin cubes with sausage, cheese, onion, and red pepper.
  3. In a large bowl combine the eggs, milk, salt, and pepper. Pour over cheese. Sprinkle with bacon. Cover and refrigerate overnight.
  4. Remove from refrigerator at least 30 mins prior to baking. Uncover and bake at 350 for 45-50 mins or until knife comes out clean.
