Homemade Prune Cake

Prune cake..at first I must admit I turned my nose up when my mom made this. However, after the first bite, I was sold. This moist cake with the sweet glaze on top practically melted in my mouth. I was going back for seconds before I finished my first piece!

Homemade Prune Cake

INGREDIENTS

Cake

  • 3 whole eggs
  • 1 cup Canola oil
  • 1 1/2 cup sugar
  • 1 cup buttermilk
  • 1 cup prunes (cooked & cut)
  • 2 cups flour
  • 1 tsp vanilla
  • 1 tsp cinnamon
  • 1 tsp nutmeg
  • 1 tsp
  • allspice
  • 1 tsp baking soda
  • dash of salt
  • 1 cup of nuts (optional)

Buttermilk Icing

  • 1 cup sugar
  • 1 tsp white syrup
  • 1/2 cup buttermilk
  • 1/2 cup butter
  • 1/2 tsp baking soda

INSTRUCTIONS

Cake

  1. Blend sugar and oil, add eggs, add sifted dry ingredients and milk alternately. Add vanilla nuts (optional), and prunes.
  2. Bake in greased pan 13x8x2 at 350 about 30 mins. Leave in pan until ready to serve.

Buttermilk Icing

  • Combine all ingredients and cook until it comes to a rolling boil. Let boil for 1 min (not more than a minute). Pour over the cake while the cake is still hot.

Fry Fam’S TIPS

  • Raisins work really good with this cake too, instead of prunes, and it makes the prep work a lot easier. I personally like the prunes the best though 🙂
  • I find that this cake is best served slightly chilled, however, it can also be served warm with a scoop of vanilla ice cream!
