Prune cake..at first I must admit I turned my nose up when my mom made this. However, after the first bite, I was sold. This moist cake with the sweet glaze on top practically melted in my mouth. I was going back for seconds before I finished my first piece!
Homemade Prune Cake

INGREDIENTS
Cake
- 3 whole eggs
- 1 cup Canola oil
- 1 1/2 cup sugar
- 1 cup buttermilk
- 1 cup prunes (cooked & cut)
- 2 cups flour
- 1 tsp vanilla
- 1 tsp cinnamon
- 1 tsp nutmeg
- 1 tsp
- allspice
- 1 tsp baking soda
- dash of salt
- 1 cup of nuts (optional)
Buttermilk Icing
- 1 cup sugar
- 1 tsp white syrup
- 1/2 cup buttermilk
- 1/2 cup butter
- 1/2 tsp baking soda
INSTRUCTIONS
Cake
- Blend sugar and oil, add eggs, add sifted dry ingredients and milk alternately. Add vanilla nuts (optional), and prunes.
- Bake in greased pan 13x8x2 at 350 about 30 mins. Leave in pan until ready to serve.
Buttermilk Icing
- Combine all ingredients and cook until it comes to a rolling boil. Let boil for 1 min (not more than a minute). Pour over the cake while the cake is still hot.
Fry Fam’S TIPS
- Raisins work really good with this cake too, instead of prunes, and it makes the prep work a lot easier. I personally like the prunes the best though 🙂
- I find that this cake is best served slightly chilled, however, it can also be served warm with a scoop of vanilla ice cream!
