Easy Slow Cooker Pot Roast

Easy Slow Cooker Pot Roast

INGREDIENTS

  • 3 to 3 1/2 lb boneless chuck roast
  • 2 large onions, sliced
  • 1/2 cup brown sugar
  • 1/3 cup soy sauce
  • 1/3 cup cider vinegar
  • 2 bay leaves
  • 3 garlic cloves, minced
  • 1 tsp grated fresh ginger
  • 1 cup julienned carrots, matchstick size
  • 2 cups sliced, fresh button mushrooms
  • 2-3 cups fresh spinach leaves, or 2 (10 oz) pkgs frozen spinach, thawed and drained
  • 2 tbsp cornstarch

INSTRUCTIONS

  1. Place meat in slow cooker. Spread onion slices over meat.
  2. In a bowl, combine brown sugar, soy sauce, vinegar, bay leaves, minced garlic, and grated ginger. Pour over beef and onions.
  3. Cover. Cook on high 5-7 hours, or on low 9-10 hours.
  4. Spread carrots, mushrooms, and spinach over beef. Cover and cook on high an additional 20 mins.
  5. In a small bowl, mix cornstarch with 1/2 cup broth from slow cooker. Stir back into slow cooker. Cover and cook 10 more mins or until broth thickens.
  6. Break beef into chunks. Stir and mix beef, broth, and vegetables. Remove bay leaves.
