Easy Slow Cooker Pot Roast

INGREDIENTS
- 3 to 3 1/2 lb boneless chuck roast
- 2 large onions, sliced
- 1/2 cup brown sugar
- 1/3 cup soy sauce
- 1/3 cup cider vinegar
- 2 bay leaves
- 3 garlic cloves, minced
- 1 tsp grated fresh ginger
- 1 cup julienned carrots, matchstick size
- 2 cups sliced, fresh button mushrooms
- 2-3 cups fresh spinach leaves, or 2 (10 oz) pkgs frozen spinach, thawed and drained
- 2 tbsp cornstarch
INSTRUCTIONS
- Place meat in slow cooker. Spread onion slices over meat.
- In a bowl, combine brown sugar, soy sauce, vinegar, bay leaves, minced garlic, and grated ginger. Pour over beef and onions.
- Cover. Cook on high 5-7 hours, or on low 9-10 hours.
- Spread carrots, mushrooms, and spinach over beef. Cover and cook on high an additional 20 mins.
- In a small bowl, mix cornstarch with 1/2 cup broth from slow cooker. Stir back into slow cooker. Cover and cook 10 more mins or until broth thickens.
- Break beef into chunks. Stir and mix beef, broth, and vegetables. Remove bay leaves.
