INGREDIENTS

  • 1lb butter unsalted
  • 1lb flour (3 1/3 cups)
  • 1/2 head celery diced
  • 3 onions diced
  • 2lbs corn kernels
  • 1 quart clam juice
  • 1 quart chicken broth
  • 1lb chourico
  • 2lbs baby marine shrimp
  • 3 tbsp garlic
  • 1btsp crushed red pepper
  • 2 bay leaves
  • 2 ounces parsley, chopped
  • salt and pepper to taste
  • 2 quarts light cream

Halved Recipe

  • 2 sticks butter
  • 1 3/4 cups flour
  • 1/4 celery
  • 1 1/2 onion
  • 1lb corn
  • 16oz clam
  • 16oz broth
  • 1/2lb chourico
  • 1lb shrimp
  • 1 1/2 tbsp garlic
  • 1/2 tsp red pepper
  • 1 bay leaf
  • 1oz fresh parsley
  • 1qt cream

INSTRUCTIONS

  • In medium stock pot over low heat, melt butter and render chourico.
  • Add onions, celery, and garlic and cook until soft.
  • Season with salt, pepper, and crushed red pepper.
  • Dust vegetables with flour to make a roux. Cook roux for 8-12 mins over medium-low heat.
  • Add clam juice and chicken broth and bring to a simmer for 10 mins.
  • Finish with corn, shrimp, parsley, and light cream.
  • Simmer and serve with CORN BREAD!!!!!!!!!!!!!!!!!!
