INGREDIENTS
- 1lb butter unsalted
- 1lb flour (3 1/3 cups)
- 1/2 head celery diced
- 3 onions diced
- 2lbs corn kernels
- 1 quart clam juice
- 1 quart chicken broth
- 1lb chourico
- 2lbs baby marine shrimp
- 3 tbsp garlic
- 1btsp crushed red pepper
- 2 bay leaves
- 2 ounces parsley, chopped
- salt and pepper to taste
- 2 quarts light cream
Halved Recipe
- 2 sticks butter
- 1 3/4 cups flour
- 1/4 celery
- 1 1/2 onion
- 1lb corn
- 16oz clam
- 16oz broth
- 1/2lb chourico
- 1lb shrimp
- 1 1/2 tbsp garlic
- 1/2 tsp red pepper
- 1 bay leaf
- 1oz fresh parsley
- 1qt cream
INSTRUCTIONS
- In medium stock pot over low heat, melt butter and render chourico.
- Add onions, celery, and garlic and cook until soft.
- Season with salt, pepper, and crushed red pepper.
- Dust vegetables with flour to make a roux. Cook roux for 8-12 mins over medium-low heat.
- Add clam juice and chicken broth and bring to a simmer for 10 mins.
- Finish with corn, shrimp, parsley, and light cream.
- Simmer and serve with CORN BREAD!!!!!!!!!!!!!!!!!!
